Make Ahead Eggs


12 eggs

½ C milk

½ t salt

¼ t pepper

8 oz sour cream

12 slices bacon, cooked and crumbled

(or breakfast sausage cooked & scrambled – M)

1 C shredded cheese


Beat eggs, add milk and spices (add fresh herbs if you like)

Scramble in butter or bacon fat until set but still moist (cook low & slow –M)

Remove from heat, stir in sour cream.

Spread in buttered 2 quart casserole or 9x13 inch glass baking dish.

Top with bacon, then cheese. Cover and refrigerate overnight.

Bake, uncovered, at 300 degrees F for 15-20 minutes.

Serve with your favorite breakfast bread.
